Perfect Mustard (recipe for the microwave)

Ingredients

200ml sugar

100ml vinegar (white)

3 eggs

50ml mustard powder (sifted)

salt (to taste)

Mix the lot together and beat until smooth.

Set microwave to 100% power; heat the mixture and cook it until thick, stirring now and then. This should take about four minutes.

Once the foam on the surface begins to disappear, your mustard has reached about the correct viscosity, not unlike that of runny chutney.

Allow it to cool (if you can wait that long) and bottle.

It works and the taste is like a recipe my mother use to make. (In a double boiler and a little bit to complicated for me)

I picked up a hidden agenda in the recipe. It is so pre 1994.

 (white)

 (sifted)

beat until smooth

stirring now and then

(if you can wait that long)

Mustard powder is flippen expensive.

'course it works! :-)

It was my mom's recipe (yes, also made in a double-boiler), and then modernized for the microwave by my aunt.
